Need a healthy rice alternative?? 
Have you ever considered cauliflower?!?!?! 
What is so great about cauliflower is that it takes on the flavor of whatever dish you are making. Plus it's super low cal!! Yay for my Chinese craving!!! 
This way you can double your portion while cutting your cal and carb intake. 
Perfect for my closet Miss Piggy!


Chicken Fried "Riced"1 head Cauliflower
5 large Carrots
1 Red Onion
1/2 bag frozen Peas
3 Chicken Breasts
3 Garlic Cloves
4 TBSP Braggs Amino

In a skillet, heat EVOO or Coconut Oil with minced Garlic.
Sautee Chicken Breasts until cooked. (I chose to season mine with Paprika, Himalayan pink salt and red pepper flakes.)
Once cooked, remove chicken and set aside. 
In a food processor, add chunks of cauliflower and pulse until rice sized.
Do small amounts at a time until the whole head is complete. Put in a microwave safe bowl and heat for 4-5 mins. Chop red onion and carrots. Add to the pan that the chicken was cooked in. Sautee until the cauliflower is ready. Add cauliflower and diced chicken back into the pan with the 1/2 bag of peas.
Add Braggs for seasoning. Push incorporated ingredients aside and scramble two eggs in pan.
Once cooked thoroughly, stir together and serve.

Take out taste without the extra calories. 

Now who is doing dishes??

Substitutions for the chicken can be made with shrimp, pork and tofu or omitted all together.  Other ingredients can be added like snap peas, black beans, pineapple, bean sprouts, water chestnuts, etc.
